Cooking by Fire, Season by Season

What happens before the doors open often matters more than what arrives on the plate.

Cooking by Fire, Season by Season

Restaurants are built from repetition: the first delivery at the back door, knives on boards, stock reducing quietly, linen folded before anyone notices. The work is precise, but the goal is not perfection for its own sake. It is ease at the table.

We keep the process visible where it adds something. Pasta is rolled in the afternoon. The fire is lit early. Bottles are opened because they taste right with food.

A useful kind of restraint

The best dishes usually become simpler as they improve. One ingredient gets louder when three others leave. Acidity replaces decoration. Texture becomes the detail.

“A dining room works when the guest stops noticing the work.”

That is the standard we return to. Not spectacle. Just a meal that feels more generous than the sum of its parts.
